I’m Claudio Consorte

An Italian chef passionate about traditional Italian cooking — just like the old days!

Ciao! I’m Claudio, a young Italian chef who has always loved sharing good food and authentic flavors.

Before I started teaching cooking classes, I spent several years working as a chef in restaurants across Spain, the Netherlands, Luxembourg, South Africa, and of course, my beloved Italy.

That experience gave me a strong foundation to refine my skills — but more importantly, it helped me understand that cooking is about much more than just recipes. It’s about passion, tradition, and above all, sharing.

This project started right at home — during a dinner with some friends (and friends of friends) who asked me to cook a traditional Roman dish: carbonara.

With the right ingredients and great company, we ended up having a truly special evening. We laughed, had fun, and shared a big plate of pasta. That’s when I thought:

What if this could become something more?
So I started offering carbonara workshops in my living room, promoting the experience on Airbnb.

I met people from all over the world, but my goal was always clear: to win the hearts (and stomachs!) of the people of Valencia.

On the advice of my friend Elisa, I opened an Instagram account… and it completely changed my life.

People started finding me through social media, and I began collaborating with MammaPazzo restaurant. From there, my carbonara reached kitchens all over the city, and I worked with different venues around Valencia. What started as a dinner with friends slowly became my life.

Today, I’m a young entrepreneur based in Valencia.

I offer Italian cooking classes, private culinary experiences for companies, at-home private chef service, and more.

After many changes and challenges, I’ve decided to take the next step and open my own space:
a cooking school where we can cook, connect, and celebrate our love for Italian food.

My cooking is simple, authentic, and nonna-approved!

If you want to learn how to make real Italian dishes, I’d love to welcome you to La Cocina de Claudio. 🍝🔥

Ciao belli!
